Vegan Greek Feta, Sun Dried Tomato, Chickpea and Artichoke Heart Wraps
An easy vegan dinner or vegan lunch that will satisfy everyone - Try it as a wrap or a flatbread pizza!

Ingredients
Note- This is a Trader Joe’s recipe- I get all the ingredients at Trader Joe’s. No Joe’s nearby- no worries- read the notes and adjustments below!
1 can greek style chickpeas from Trader Joe’s
1 can artichoke hearts
1 jar sun dried tomatoes
1 block of vegan feta cheese
Greens - arugula or spinach work well - optional!
Flatbreads or wraps - I used Trader Joe’s Naan and Lavash
Instructions
Drain the garbanzo beans and rough chop them into smaller pieces - about 1/4 to 1/2 size of original size works well
Drain the sun dried tomatoes and chop them into small pieces
Drain and chop the artichoke hearts into 1/4 size pieces
Add the garbanzo beans, artichoke hearts and sun dried tomatoes to a bowl and mix well. You can add a bit of salt or other spices if you want but I didn’t- the garbanzos are already spiced.
Chop up or crumble your block of feta
To make flatbreads - add all ingredients from the bowl onto the flatbreads being sure to spread out evenly. Then top with vegan feta cheese (see notes and adjustments) and bake in a 350 degree oven for 10 minutes or until golden brown
To make wraps- put filling onto a wrap, add vegan feta, add greens, and wrap like a burrito! I like to wrap these in parchment and foil and then freeze for lunches later in the week.
Notes and Adjustments:
You can brush the flat breads with olive oil from the sun dried tomatoes or garbanzo beans if you want- it adds a nice base and flavor
You can add the feta to the flatbreads after they come out of the oven instead of before- this makes the flavor of the vegan feta a bit brighter
If you don’t have a Trader Joe’s near you - you can get all of these ingredients at most stores. The greek style chickpeas are unique to Trader Joe’s but if you watch my YouTube video linked above I show you how to make a copy-cat version of them
There are other vegan feta cheeses on the market if you don’t have a Trader Joe’s but you can also use vegan mozzarella which is pretty easy to find.
