Lebanese Cabbage Salad

Easy & Delicious Vegetarian Salad Recipe

I love to serve this authentic Lebanese cabbage salad recipe as a healthy side dish for just about any main, but it pairs especially well with Asian and Mexican recipes. Naturally it goes great with other Lebanese dishes too. This is a simple vegetarian salad that you can make up in minutes. It’s a great starter vegan recipe and also a wonderful side dish to bring to parties and picnics.

Ingredients

  • 1/2- 1 head of cabbage depending on the size of the head of cabbage. You can use red, green or a mix of both. This salad is best eaten the day it is made so I use enough cabbage for the number of people I want it to serve.

  • 1-2 cloves of garlic 

  • 1 teaspoon salt

  • Red wine vinegar - about 2-4 tablespoons

  • Olive oil - about 1-3 tablespoons

Instructions:

  1. Cut up the cabbage into long strips, then cut the long strips in half

  2. Peel and chop the garlic into small pieces

  3. Mash the salt and garlic together with a mortar and pestle or the back of a spoon.

  4. Add your vinegar and oil to the salt and garlic mixture (I tend to use about 1 part oil to 2 parts vinegar) If I use a whole head of small cabbage or 1/2 a head of large cabbage I use 2 tablespoons of olive oil and 3-4 tablespoons of red wine vinegar.

  5. Toss the cabbage with the dressing shortly before you plan on eating it.

  6. Enjoy!

Notes and Adjustments!

The dressing really needs to be made to taste, feel free to play with the salt, vinegar, and olive oil amounts.
