African Inspired Vegan Wrap Recipe

Prep time 10 minutes | Cook Time 20-30 minutes | Makes 2-3 Burritos

This delicious vegan wrap is inspired by an African Street food from Uganda called a Ugandan Rolex. I have been working on a series of “burritos from around the world” and this is my second entry! In Uganda these wraps are made with egg in in this delicious vegan wrap version I replaced the egg with a subtle yet flavorful tofu “egg.”

The tofu “egg” is topped with sauteed jalapenos and vegetables and drizzled with a smokey and sweet salsa that brings the flavors of African cuisine right into your kitchen.

This vegan wrap is not just a meal; it’s a feast that proves you don't have to sacrifice flavor for health.

This is a perfect high protein vegan breakfast or really simple vegan dinner, I hope you enjoy it!

Ingredients & Instructions

  • Roti or Chapati Bread is used as the wrap for these burritos- you can buy frozen or uncooked Roti at an Indian market, alternatively you can pick up Roti at an Indian restaurant. If you can’t find it you can use any flatbread as a replacement.

  • 1 container of firm silken tofu–it is ok to use any kind of silken tofu if you can’t find firm silken. If you can’t get silken tofu use a soft regular tofu.

  • 3 cloves of garlic

  • 2-3 fresh jalapeno peppers

  • 1/2- 3/4 cup of diced cherry or grape tomatoes

  • 1/2 cup of chopped scallions

  • 1 handful of chopped spinach

  • Shredded carrots for topping

  • 1/4-1/2 teaspoon of Turmeric

  • Salt/pepper

  • Olive oil or avocado oil

    For the Salsa :

  • 3 fresh Roma tomatoes cut in halves or fourths and remove seeds

  • 3 pitted Medjool dates

  • 1 teaspoon of ancho chili powder

  • 3/4 teaspoon of cumin powder

  • 1/2 teaspoon of ginger powder

  • 1/2 teaspoon of salt

  • 1/4 teaspoon of cayenne red pepper

  • 3/4 tablespoon of apple cider vinegar

To make the burrito filling:

  • Saute 3 cloves of chopped garlic in olive oil or avocado oil over medium low heat until fragrant (about 1 minute)

  • Crumble the silken tofu into the pan with your hands

  • Season the tofu by sprinkling it with salt, tossing it, then sprinkling it again with salt. Then add a few shakes of black pepper, and about 1/4 -1/2 teaspoon of turmeric. I don’t measure these spices, I salt and pepper to taste and add tumeric until it is a nice yellow color, but I probably use about 1/4 - 1/2 teaspoon of salt. NOTE- tofu has no flavor on it’s own so it is important to season it!

  • Let the tofu cook uncovered for about 10-15 minutes stirring occasionally until the excess water steams off and the tofu firms up a little bit. It should have an “egg like” consistency. Once it is done you can remove the tofu from the pan and set it aside in a covered dish to keep it warm.

  • Remove the stems and seeds from 2-3 fresh jalapeno peppers, and chop them into small peices

  • Saute the jalapenos in a small amount of olive or avocado oil until they are bright green (about 2-3 minutes)

  • Add in 1/2 - 3/4 cup of diced cherry or grape tomatoes and saute until they are soft (2-3 minutes)

  • Add in 1/4 cup of chopped scallions

  • Add in 1 handful of chopped spinach (about 30 grams) and saute it until it is wilted down, you can add a tiny bit of water if you need, if the vegetables are sticking to the pan, but there should be enough water from the tomatoes.

  • Lightly salt your vegetables

  • Once the spinach is wilted down remove the vegetables from the heat and it’s time to build your burritos!

For the Salsa: Combine the following ingredients in a food processor

  • 3 fresh Roma tomatoes cut in halves or fourths and remove seeds

  • 3 pitted Medjool dates

  • 1 teaspoon of ancho chili powder

  • 3/4 teaspoon of cumin powder

  • 1/2 teaspoon of ginger powder

  • 1/2 teaspoon of salt

  • 1/4 teaspoon of cayenne red pepper

  • 3/4 tablespoon of apple cider vinegar

Pulse the mixture for about 30 seconds then process it for about a minute or until smooth.

To Build Your Burritos!

  • Heat up/cook the roti bread according to the package directions. If you buy uncooked roti you can watch my YouTube video where I show you how to cook the roti (linked above)

  • Add a scoop of tofu mixture to your roti bread

  • Add in a scoop of the sauted vegetables

  • Top with raw shredded carrots, and a few raw scallions

  • Add a dollop of the delicious smokey sweet salsa (see recipe above) or buy a smokey sweet salsa!

  • You can roll up your Ugandan Rolex or eat it like a taco, I prefer to eat mine like a taco- Enjoy!
