Earth Day is every day - This is what I tell my Environmental Science students. Still, it is great to see groups of people stepping up on Earth Day 2023 to spread awareness, host cleanups, and hold zero waste events; I even saw a reduce, reuse, recycle free-sale in my neighborhood. It still always surprises me how little people know about how our diet affects Earth. In fact, the International Panel on Climate Change has found that 1/3 of all greenhouse gasses are due to the food we consume and animal-based foods are associated with the highest greenhouse gas emissions.
