Black Bean and Guacamole Wraps

I created these black bean and guacamole wraps one day when I was headed to the beach with my friends and wanted something delicious, filling, and easy to transport. These scrumptious wraps are packed with protein-rich black beans and creamy, homemade guacamole, making them a perfect option for those choosing a whole foods plant-based diet. Plus, they are incredibly versatile, making them a great option for lunch on-the-go or a quick and easy dinner. This easy recipe is great for people who don’t want to sacrifice their health just because they are busy. Ingredients
2 ripe avocados
3 scallions or 1/4 cup of onions
1/4 teaspoon of garlic powder
1/4 teaspoon of salt
Juice of one lime
2 tablespoons of good salsa
1-2 tablespoons chopped cilantro for garnish
1 can of black beans
1/2- 1 teaspoon of chili lime seasoning
salt to taste
Tortillas
Optional lettuce or tomato
Instructions
Start by heating your black beans over low heat in their liquid while you prepare the guacamole
To prepare the guacamole
Chop your avocados up and put into a medium size bowl
Chop your scallions up very fine- you can hand chop or use a food processor - be sure to take the ends of the scallions off first
Add the salt and garlic powder to your bowl
Add the salsa to your bowl
Add the juice of one lime to your bowl.
Mash everything very well with a large fork, a pestle or the back of a spoon. Once everything is mashed up be sure to mix it well. Be sure to mash it up until everything is well combined and you guacamole is mostly smooth.
Top with chopped fresh cilantro
Drain heated black beans and place into a small bowl
Add about 1/2 teaspoon of chili lime seasoning ( I like the kind you can get at Trader Joe’s but you can also get Tajin at most supermarkets) and mash the beans up well with the chili lime seasoning
Add salt to. your beans to taste (optional)
To wrap your burritos add a spoon of guacamole, a spoon of beans, lettuce, tomato or salsa if you want
Roll up and enjoy!
Notes and Adjustments!

I like to wrap these in foil and store in the refrigerator or freezer for easy grab and go lunches. If you want to be able to microwave them just wrap them in a layer of parchment paper then foil on the outside- you can remove the foil and heat in the microwave.
