Vegan Sloppy Joes! Easy Tempeh Recipe- Low Fat and High Protein

Think you don’t like Tempeh- try this recipe! I have been making these vegan sloppy Joes for 30 years and they are always a hit. This tempeh recipe is a super easy fast recipe that can be whipped up even after a busy day at work. You don’t have to sacrifice your health just because your are busy!
This recipe is low fat and high protein, kids will gobble these up and so will adults.
Ingredients
1 block of tempeh
about 1 cup of water
Avocado oil for sautéing- or other high smoke point oil
1/2 green bell pepper cut into chunks
1/2 a yellow or white onion
2 cloves of garlic
1 15 ounce can of tomato sauce (NOT spaghetti sauce!) or 1 can of pureed tomatoes
1 teaspoon vegan worcestershire sauce- it’s ok to substitute soy sauce
1 teaspoon chili powder
1 teaspoon salt or to taste
1/4 teaspoon cayenne red pepper- optional!
pepper to taste
Instructions
Crumble your tempeh and add it to a frying pan
Cover the tempeh with water and heat over medium low heat until the water boils off/steams off
Chop 1/2 of a bell pepper into medium size chunks
Chop 1/2 onion into medium size chunks
Chop 2 cloves of garlic into tiny pieces
Heat your avocado oil over medium low heat until it starts to sizzle!
Saute your onion and bell pepper in the heated oil until the pepper is bright green and the onion is fragrant- 3-6 minutes. You want the veggies to be firm not soft.
Add the garlic into the saute pan and stir until fragrant- 30-60 seconds
Add your crumbled tempeh in and mix well
Add in 1 teaspoon of vegan worcestershire sauce- it’s ok to substitute soy sauce for this step- mix well with the tempeh
Add in 1 can of tomato sauce (it should not have seasonings in it- just plain tomato sauce) it is also ok to substitute pureed tomatoes
Add in your spices! 1 teaspoon salt, 1 teaspoon chili powder, 1/4 teaspoon cayenne (ONLY if you like spice) and pepper to taste.
Let it cook for about 10-15 minutes until it becomes a bit thicker and some of the water steams off- you want them “sloppy” but not too sloppy!
Sever on a hamburger roll and enjoy!!!
