Healthy Green Juice Recipe - Great Taste, Saves Money, Reduce Single Use Plastic!

I drink this green juice or some variation of it every day. This tasty green smoothie has anti-cancer properties, protects eye health, and will boost your energy levels. Not only that it saves money as it is a fraction of the cost of store bough smoothies and eliminates single use plastics.

Vegetarians are often looking for ways to add more iron into their diets and the greens in this recipe provide iron while the citrus helps you absorb the iron.

Ingredients

  • 1 handful of kale, Swiss chard, spinach (any green works- I use kale mostly because of the nutrient content) Use the leaves only- remove hard stems.

  • 1/2 regular size cucumber or 1 whole Persian cucumber -chopped into large pieces

  • 1 green apple sliced into 1/8 inch slices

  • 1 piece of citrus fruit such as orange, tangerine, or mandarin ( I even use grapefruit!)

  • 1-2 pieces of celery cut into 3 inch pieces.

  • 2 cups of water (approximate- based on how thin you like it)

Instructions

A high speed blender will work best for this. I own a Vitamix and although expensive it is worth every penny I paid for it. There are many lower cost high speed blenders on the market now though and if you don’t mind it not perfectly smooth any blender will work.

  1. Put your leafy greens in the bottom of the blender - this is important- greens must be in the bottom to blend correctly.

  2. Add all other vegetable/fruit ingredients on top of the greens

  3. Add 2 cups water - you can play with this amount based on how thin you like your juice

  4. Blend on low speed, slowing increasing to highest speed- Blend on highest speed for 30-45 seconds

  5. Store in a mason jar for up to a week in the refrigerator and drink a bit each day! Check your energy levels- I promise you will feel better when you drink this!

Notes and Adjustments:

  • Play with this recipe- try different greens and different citrus fruits based on season. Be sure to chill before drinking as it tastes better!
