Chocolate Mocha Smoothie Recipe
A Quick, Healthy, Vegan Breakfast Idea

Ingredients
1/4 cup of raw almonds, it is best to soak these in warm water for about 20 minutes - you can also quick soak in hot water for about 10 minutes
2 medjool dates, pits removed
3/4 cup of firm silken tofu or regular soft tofu
1/2 cup of vanilla cashew yogurt
1 scoop of Earthchimp vegan protein powder - see notes and adjustments
2 tablespoons of unsweetened cacao powder
2 teaspoons of instant coffee
1/2 cup of oat milk, cashew milk, soy milk or almond milk
1 tablespoon of chia seeds (optional)
Instructions
Put all the above ingredients into a high speed blender in the order in which they are listed (see notes and adjustments.) If you would like this to be cold add a few cubes of ice as well.
Blend on the low setting gradually increasing the speed over about 30 seconds.
Then blend on the high speed setting for about 30 seconds, until your smoothie is perfectly smooth.
I like to top with fresh strawberries or even vegan whip cream!
Notes and Adjustments:
This smoothie bowl has about 30 grams of protein and less than 10 grams of sugar. If you want even more protein add in an additional scoop of protein powder.
As is this smoothie is fairly thick, if you want a thinner smoothie add in more milk. If you would like to serve it as a smoothie bowl, add in 1 tablespoon of chia seeds and refrigerate for about 20 minutes. Then top with chocolate shavings and your favorite fruit!

Equipment - You will need a good quality blender to make good smoothies and juices, but you do not need to spend a fortune. I did invest in a Vitamix blender after hours of research, and I am completely satisfied with it and use it every day. However, this an expensive investment and is not necessary.
