Easy Tropical Mango Smoothie Bowl Recipe

Ingredients

  • 1/3 of a cup of raw cashews, soak in warm water for about 20 minutes

  • 1 heaping cup of frozen mango

  • 1/2 of a peeled orange

  • 2 Medjool dates, pits removed

  • 1 cup of fresh or canned pineapple

  • 1 teaspoon of vanilla extract

  • 1 tablespoon of chia seeds

  • 3/4 of a cup of unsweetened cashew yogurt- vanilla flavored

Instructions

  • Put all the above ingredients into a high speed blender in the order in which they are listed (see notes and adjustments.)

  • Blend on the low setting gradually increasing the speed over about 30 seconds.

  • Then blend on the high speed setting for about 30 seconds, until your smoothie is perfectly smooth.

  • Pour into a bowl and top with your favorite tropical toppings, I like to top with homemade granola, sliced kiwi, and coconut shreds.

Notes and Adjustments:

Substitutions- the wonderful thing about this recipe is you can make simple substitutions, if you don’t have dates, add agave or maple syrup. You can use any kind of plant based milk if you don’t have coconut milk on hand.

If you want a smoothie and not a smoothie bowl, simply increase the amount of plant milk you use, or use orange juice instead of an orange.

Equipment - You will need a good quality blender to make good smoothies and juices, but you do not need to spend a fortune. I did invest in a Vitamix blender after hours of research, and I am completely satisfied with it and use it every day. However, this an expensive investment and is not necessary.
