Delicious and Easy Mexican Rice Recipe

Delicious Mexican Rice Recipe - Perfect for Burrito Bowls and Vegan Burritos
My very favorite way to eat this rice is to use it as a base for burrito bowls. Top it with beans, corn, jalapenos, avocado, salsa, and vegan rice for a decadent, nutrient-rich, and fun vegan dinner that even kids will enjoy.
Ingredients
½ onion
2 cloves garlic
1 cup white rice (rinsed and drained)
1 teaspoon oregano
1 teaspoon cumin
dash of cayenne pepper
½-1 teaspoon chili powder
1 teaspoon salt
3 cups water
1 cup vegan chicken broth
2 tablespoons tomato paste
1 tablespoon plant-based butter
Instructions
Dice the onion and saute in plant-based butter for 1-2 minutes
Chop your garlic into small pieces, add into the onion and butter mixture. Saute for 30 seconds or until fragrant
Add in the spices (oregano, cumin, and chili powder) and stir to mix them with the onion/garlic mixture. Saute for about 30 seconds
Add in your rinsed rice and stir to coat
Let the rice cook for about 1-2 minutes with the spices.
Add in 3 cups water
Add in 1 cup of vegan chicken broth
Add in 2 tablespoons of tomato paste and stir until it is dissolved
Add in a dash cayenne and stir well
Add in your salt and stir well
Bring the rice to a boil. Then bring the heat to low and simmer for about 20 minutes for white rice (If you are using brown rice you will simmer for about 35 minutes, but I suggest using white rice)
Turn off the heat and let the rice sit and absorb the water a bit, the rice will still have a bit of liquid around it - that is ok!

I love to use this rice as the base of burritos or burrito bowls. For quick and easy yet tasty burritos, I use canned beans but cook them with onions and hot peppers for flavor. If you want to see how I do that check out my linked YouTube video above.
