Vegan Fajitas
A High Protein Vegan Recipe - Easy and Delicious

Ingredients
Seasoning Ingredients:
2 teaspoons chili powder
1/2 teaspoon garlic powder
1/2 teaspoon cumin
1 teaspoon oregano
3/4 cups of vegan beef bouillon
1 Tablespoon of cornstarch
Cayenne pepper to taste
Salt to taste
Fajitas Ingredients
1 package of seitan-
3 small bell peppers of different colors cut into strips
1 small to medium yellow onion cut into strips
Avocado oil or other oil to saute
fresh jalapenos - optional
Directions
Mix the (warmed) vegan beef broth with the cornstarch
Add the other seasonings and blend well
Marinate the seitan for 20 minutes or more in the seasoning mixture
Heat 1-2 tablespoons of oil in a pan
Saute onions for about 1-2 minutes
Add chopped bell peppers and saute until the peppers begin to become brightly colored -don’t over cook! You will cook for about 5 minutes - peppers should be firm but bright!
Add 1-2 chopped green chiles- like jalapenos- optional- only if you love heat!
Add your seitan to the pan without the marinade- just the seitan
Let the peppers, onions and seitan cook for another 2-5 minutes
Add in about 3/4 of the marinade to the pan and let the mixture cook for another 1-3 minutes. The key is you want your veggies to not be overcooked and wilted.
To serve traditional style- put your fajita veggies in a flour tortilla, top with vegan sour cream and or guacamole and enjoy!
Optionally, you can easily transform this into a transportable appetizer by making it a quesadilla- see notes and adjustments below!
Notes and Adjustments!
The recipe can easily be transformed into a delicious vegan quesadilla that is a great tailgating food or vegetarian appetizer for parties. To make these into a quesadilla place a flour tortilla in a nonstick or cast iron pan. Fill one side of the tortilla with the cooked fajitas and top with vegan Mexican style cheese. Then carefully fold the tortilla over and let it cook until the bottom is golden brown- about 3 minutes. Carefully flip the quesadilla and cook on the other side for 2-4 minutes until golden brown. Slice with a pizza cutter into 2-4 equal triangle size quesadilla slices! This recipe will make about 4 quesidillas!
I generally add fresh chiles to this recipe but you can add cayenne to the seasoning mix for heat instead. I also don’t add extra salt but you can salt to taste. Enjoy!
