Kibbeh - The National Dish of Lebanon - Vegan Kibbeh

Kibbeh is the national dish of Lebanon. This plant-based version is packed with protein and has NO cholesterol and half the fat of the traditional lamb based version

Authentic Kibbeh- Veganized!

Ingredients

  • 1 package of Impossible Plant-Based Meat- if you can't get Impossible Meat in your area you can try Beyond Meat instead. Trader Joe's sells their version of Impossible Meat too.

  • 3/4 cup of medium grain bulgur wheat (you need to soak this in cold water)

  • 1/2 cup of chopped parsley - use the flat Italian parsley

  • 1 teaspoon of allspice

  • 1 teaspoon of salt

  • Small chopped yellow onion- about 3/4 cup

  • Optional for serving: Pita Bread, tomatoes, and vegan tzatziki sauce - Trader Joes has a great vegan tzatziki sauce

Instructions

  1. Soak your bulgur wheat in cold water for about 20 minutes - it will fluff up in size.

  2. Put Impossible meat in a bowl.

  3. Add in onions, parsley, all spice and salt and mix very well.

  4. Drain the bulgur wheat in a small strainer.

  5. Squeeze the water out of the wheat by squeezing in your hands and add about 3/4 cup of wheat to your "meat" mixture

  6. Make small patties about 2 inches across and place on baking sheet - I line mine with parchment paper

  7. Bake at 350 for about 20 minutes until browned but not burnt!

Notes and Adjustments:

Traditionally this type of Kibbeh is fried- if you prefer to fry it my grandmother would fry it in a pan in olive oil - it's delicious but adds calories and fat

The traditional way to eat this type of Kibbeh is to just eat it plain- BUT I like to put it in a piece of pita with a slice of tomato and tzatziki sauce- Trader Joe’s has a great vegan tzatziki sauce
