Vegan Caesar Salad - High Protein and So Delicious!

Vegan Caesar Salad

This incredible and easy vegan Caesar salad is guaranteed to be a hit at any party or potluck you bring it to. It makes a great side dish, lunch, or appetizer. The addition of vegan “chicken” makes it high in protein.

Try it out. you won’t be disappointed!

Ingredients

  • 1 large head of romaine lettuce or two smaller heads

  • 1/3 cup good quality olive oil

  • 2-3 cloves of garlic

  • 2 lemons

  • Salt and pepper to taste

  • Vegan croutons

  • Vegan Parmesan - check out my recipe to make your own! Vegan Parmesan

  • Optional - 1 package of vegan “chicken.” For this salad I like the brand Sweet Earth and I use their Mindful Chik’n Strips. They are high in protein and made with real ingredients!

Instructions

  1. Chop the Romaine into small pieces- wash and dry with a salad spinner

  2. Chop 2-3 cloves of garlic very well

  3. Mix garlic with 1/3 cup of good quality olive oil -if you can mash the garlic in the oil it will infuse better.

  4. Dress the salad with the olive oil/garlic dressing

  5. Add in your plant based “chicken”

  6. Add salt and pepper to taste and then toss well to coat

  7. Top with croutons and vegan Parmesan cheese and enjoy!

Notes and Adjustments:

If you don’t have vegan chicken on hand I love to add in chopped tofu (seasoned is best) or garbanzo beans- both still add protein and are a great addition.

I have made this salad with less oil and it turns out just as good! Enjoy!
