Easy Homemade Pizza- Incredible Vegan Pesto Pizza with Sun Dried Tomatoes

Would you believe me if I told you that anyone can make delicious homemade pizza? This vegan pesto pizza is delicious and can be made in under 30 minutes! All of these ingredients for this special vegan comfort food can be found in one store- Trader Joe’s. If you don’t have a TJ’s in your area- no worries- you can find these ingredients in any store and can whip this up in no time. Not vegan- no problem- everyone will love this incredible vegetarian pizza!

Ingredients

I get all of the ingredients from Trader Joe’s but you can find them just about anywhere

  • 1 package of pre made pizza dough (from the refrigerator section)

  • 1 container of Vegan Kale, Cashew and Basil Pesto

  • 1 jar of sun dried tomatoes (8.5oz)

  • 1 package of Vegan Cashew Cheese- Mozzarella Style- 8oz

  • Salt to taste

Instructions

1. Preheat oven to 500 degrees- if you are using a pizza stone heat the pizza stone in the oven. You do not need a pizza stone for this recipe.

2. Let you dough rest in a metal bowl, lightly coated with olive or avocado oil, at room temperature for about 10 -30 minutes. If you are pressed for time you can skip this step.

3. Flour your work surface well.

4. Put your sun dried tomatoes in a small strainer/colander and set to the side to drain (they come in oil)

5. Roll you pizza dough into a 12-13 inch circle/pizza shape.

6. Put your dough onto a metal pizza pan - no pizza pan- no problem- you can use a cookie sheet. If you use a cookie sheet you can gently oil or flour the surface to make sure it doesn’t stick. If you have a pizza stone, you will top your pizza on a pizza peel then slide onto the pizza stone when ready to bake.

7. Spread the entire container of pesto evenly onto the crust.

8. Sprinkle the container of vegan mozzarella cheese over the entire pizza evenly.

9. Spread the container of sun dried tomatoes over the pizza evenly.

10. Bake for 10-14 minutes- until crust is golden brown and cheese is melted.

*If you want a crispier crust slide the pizza off of the pizza sheet, onto the wire rack of the oven for the last 2-3 minutes of cook time.

Notes and Adjustments!

If you don’t have a pizza stone but want a crispier crust you can also heat your metal pizza pan ahead of time. Alternatively. you can just slide your pizza onto the oven rack for the last few minutes of baking.
