Vegan Lentil Tacos - High Protein and Iron Rich Vegan Dinner!

I first discovered these vegan tacos at one of my favorite restaurants in my hometown of Buffalo, NY - Amy’s Place. At Amy’s these are called Pitacos because they are served in a pita. This is my version of Amy’s Lentil Tacos, and they are an incredibly easy, kid-friendly, and super nutritious plant based recipe.
Vegans are often looking for ways to add more iron and protein into their diets and this is a fun and delicious way to do that.
Ingredients
- 1 Green Bell Pepper 
- 3/4 cup yellow onion 
- 2 cups cooked lentils 
- Avocado Oil - or other high smoke point oil (1-2 Tbs) 
- Salt & Allspice 
Instructions
- Heat your high smoke point oil in a saute pan 
- Chop your bell pepper and onion and add to the pan once oil is heated. 
- Saute until peppers and onions are just starting to get fragrant and soft 
- Add 2 cups precooked brown lentils into the pan(see below for lentil cooking instructions) 
- Add salt and allspice to taste - about 1/2 t of allspice and about 1/2 t of salt depending on how the lentils are cooked 
- Serve in pita pockets and top with plant based cheese, tomato and hot sauce 
Notes and Adjustments:
How to cook raw lentils:
- Add the cup of lentils to 3 cups of water in a saucepan 
- Heat until water is boiling - then lower to a simmer 
- Cook for about 40 minutes until lentils are tender but not mushy! 
- You can add salt in the last 5 or so minutes and mix well.
